Deirdre (Dee) Buggy

We are delighted to welcome our new House Chef Deirdre (Dee) Buggy to the Cow House Team. Over the past weeks she has been embracing our culinary sensibility, developed by Frank over the last 17 years, while bringing a wonderful fresh creativity to the table.

An artist and chef, Dee has almost 30 years of culinary experience working in kitchens, starting at 16 in Wexford's Whitford House Hotel in 1995. She learned her craft under the tutelage of renowned Wexford chef Liam Forde for 10 years and has worked in various restaurants such as Heaven’s Above in the Sky and on the Ground, Fordes on the Quay, La Dolce Vita, and others. In recent years, Dee has worked in the popular Wexford restaurant Ten West Bistro before taking the position of House Chef at Cow House Studios. Her fondest childhood memory with food was foraging for hazelnuts, wild cherries, wild garlic, and various berries, all available in the fields and ditches around Ballyhogue, where she grew up. Dee enjoys making fresh pasta and bread, as well as classical French and Middle Eastern cuisines, and loves a good sauce! Her passion for foraging and fresh seasonal produce aligns with our existing ethos, and she will undoubtedly introduce exciting new dishes to our already popular food offerings.

As an artist, Dee graduated from Wexford Campus School of Arts with a BA in Art in 2018. She is a multidisciplinary artist whose work involves elements of performance, sculpture, video & photography. In recent years, her work has been community-based. She served on the Artists in the Community Art panel for four years, participated in the Living Arts residency, collaborated with Creative Schools Ireland on several projects, and was part of a team that successfully secured funding for a small arts festival in Wexford town. Dee has performed in the R.H.A. in Dublin, at K-Fest in Killorglin, County Kerry, Culture Nights in Wexford, and collaborative performances with Allana O’Kelly and other artists. In her new role, Dee is eager to integrate her artistic practice with her extensive knowledge of food and hospitality. She looks forward to creating delicious, nourishing meals at Cow House, and we are excited for our guests to enjoy her fresh contributions to our kitchen.
